Grampa Kirby's Quick Bread

Mix together:
   1 ¼ C milk

   Stir 2 tsp honey, syrup, or white or brown sugar into milk.
   Then, warm the mixture before adding yeast.

   Once the milk mixture is warmed, mix in 1 TB yeast, cover it and let it proof for 5+ minutes.


While yeast is proofing, combine in a mixing bowl:

   2 C white flour.

   1 C whole wheat flour.
   (Or just 3 C white flour).

   ½ tsp salt.

   2 tsp of your choice of spice - one tsp of two different spices works very well.
   2 TB Baking powder.
   ½ C Parmesan Cheese and/or cooled bacon bits (if desired).

Pore in but don't mix:

   ¼ C oil into milk and yeast.

Combine:

   Milk mixture into flour mixture.
   Make sure all dry ingredients are moist.

Turn onto a floured board.
Knead about 40 times on a floured board.
Add small amounts of flour to prevent sticking to hands and board.

Flatten on a baking sheet covered with parchment paper.
Coat quick bread with oil.
Cut into desired sizes with a table knife but only some way through the dough.

Let rise in a warm place for at least 15 minutes.

Preheat oven to 385 degrees.
Bake at 385 for 22+/- minutes, depending on your altitude.

It's altitude, not attitude! Ok, yes, you're right! It can be both.

Try not to overbake.

Enjoy Grampa Kirby's Quick Bread with strawberry jam, eggs and bacon, a savoury gravy, or lots of butter. When cooled, or the next day, cut in half and warm by frying with butter on the cut sides.
